What is an Olive Oil Sommelier?
A sommelier is a highly knowledgeable olive oil professional who is an expert in every aspect of olive oil service and food and olive oil pairing. In addition, olive oil sommeliers understand olive oil elaboration process and are able to identify which practices may affect to its quality.

Today, the responsibilities of an olive oil sommelier are as varied as they are demanding. A good sommelier must show a mastery of a broad spectrum of olive oils. Other responsibilities include:

Olive oil sommeliers working at/for olive oil mills will be able to identify defects in olive oils and alert about a possible problem within the ellaboration process.
Others working at specialised stores/ importing companies/ distributors will be prepared to select olive oils according to best price/quality ratio.

Olive Oil sommeliers working in restaurants, specialised stores and others will be responsible for:-
Storing olive oils in optimal conditions / temperature

Rotating stock in proper order/ ensure accurate pricing

Presenting the olive oil list to clients highlighting featured olive oils/ new additions

Emphasizing olive oils that pair well with meals

Ordering olive oils appropriate to restaurant offerings (sometimes directly from the olive oil mill)

Educating front-of-house staff and chefs about olive oil.

Olive Oil Sommelier Certification
Topics include ~ Classification of olive oils, Quality criteria, Olive and olive oil varietals,
Production processes, Olive oil defects, Gastronomy
This course includes a visit to an olive oil mill.

This course is designed for professionals and non-professionals interested in learning both how to taste olive oil along with important questions of how quality olive oil is produced.




Advanced Olive Oil Sommelier Certification
Once you have achieved certification as an Olive Oil Sommelier, you can then proceed to one or more Advanced Olive Oil Sommelier Certifications specialising in the following areas.

You will be required to complete the corresponding courses and exams.

Master Milling
Mill Mechanics

Export and Commerce

Gastronomy

Olive Oil Culture

This course is designed for those who have completed Level 1 Olive Oil Sommelier Course or who have an equivalent accreditation of the basic concepts of virgin olive oil sensory analysis.




Master Olive Oil Consultant Certification
Those who have achieved all four specialities corresponding to the Advanced Olive Oil Sommelier Certification, will be eligible for certification as Master Olive Oil Consultant Certification.

You will be required to complete a project overseen by a specialist accredited by the Olive Oil School of Spain and an Interview with the Director of the Olive Oil School of Spain.
